Top London chef to cater for chalet guests

Chalet operator Fish&Pips will hire a chef from a Michelin-star London restaurant to cater for its guests at its new property in Meribel for three weeks during the coming ski season.

Chris Bolan, sous chef at the Trinity restaurant in Clapham Old Town, will take over the Fish&Pips' kitchen for each week to provide daily breakfast, afternoon tea and five-course evening meais.

Trinity chef Adam Byatt, who has a hand in training the Fish&Pips new season chefs each year, will also make guest appearances at chalet Cerf Rouge during the 'Taste of Trinity' weeks.

The chalet menu will reflect Byatt's signature contemporary style and feature Trinity classics such as Vermouth poached salmon, truffled comte gougeres and red wine braised Irish beef cheeks.

Guests can choose to tailor the menu and number of evening courses to their taste, creating lighter options as preferred.

The package is available exclusively for the following arrival dates: March 18 and 25 and April 1.
