Holland America Line has introduced a series of new culinary options at its Denali Lodge in Alaska.
The updates include refreshed menus at the Canyon Ridge Grill and Karstens Public House; an expanded cocktail selection; and continued collaboration with the Marine Stewardship Council to serve sustainable seafood.
Signature dishes now available at Canyon Ridge Grill comprise clothesline candied bacon, Alaskan cod, wild-caught salmon, jumbo lump crab cakes and Wagyu burgers. Locally produced beverages, including microbrews from Anchorage Brewing Company and spirits from regional distilleries, feature throughout the bar and restaurant menus.
Two new cocktails have been added:
* Old Sourdough: A classic Old Fashioned featuring Port Chilkoot Boatwright bourbon from Haines, Alaska, cassia bark bitter from Denali Spirits and Luxardo over ice.
* Wonder Lake Lemonade: House-made lemonade mixed with fresh berries and vodka flavours from Anchorage Distillery including blueberry, raspberry and fireweed.
Karstens Public House now features shipboard favourites such as dive-in burgers and hot dogs, as well as longstanding dishes including beer-battered halibut and chips, alder smoked salmon chowder and all-you-can-eat breakfasts. Local beers are available from several Alaska brewing companies.
Meanwhile, the lodge’s seafood dishes are now fully certified by the Marine Stewardship Council. The initiative supports healthy fisheries and responsible sourcing, and complements Holland America’s Global Fresh Fish Programme, which provides sustainable seafood both at sea and ashore.
Additional food and beverage options include:
* In-room pizza delivery.
* The Music of Denali Dinner Theatre, which pairs family-style Alaskan salmon and smokehouse BBQ with a musical retelling of the first ascent of Mt. McKinley.
* Grizzly Grind espresso bar, which serves local coffee and teas alongside fresh pastries.
Holland America’s Alaska season sails annually from April to September. A Denali Lodge cruise tour combines an Alaska voyage with overland travel into Denali National Park.
Further enhancements are planned for 2026, including the introduction of a new coffee house and a full renovation of the main lodge.
All enhancements form part of Holland America’s Destination Dining programme, which ‘prioritises freshness and regional influence’, and ensures the quality of food both on land and onboard.
Marisa Christenson, director of food & beverage operations and development at Holland America Line, said: “We’ve taken a thoughtful approach to evolving the food and beverage experience at Denali Lodge. Our goal is to create memorable dining moments that reflect the flavours and spirit of Alaska – from wild salmon smoked chowder and pan-roasted Alaskan cod to cocktails crafted with Denali Spirits and Anchorage Distillery vodkas, and desserts made with local berries. These offerings are part of our broader commitment to Destination Dining, where freshness and regional character shape every dish.”
