Holland America Line is introducing a refreshed experience at its Pan-Asian Tamarind speciality restaurant.
More than a dozen new dishes will be added, alongside existing appetisers, main courses and desserts.
Dishes feature seafood that is part of Holland America Line’s Global Fresh Fish Programme, which offers more than 80 varieties of fresh fish sourced locally from across a worldwide network.
Tamarind is available on five ships, with the new menu to roll out on Rotterdam, Nieuw Statendam, Koningsdam, Eurodam and Nieuw Amsterdam through to June 2025. Beginning in October 2025, a Taste of Tamarind Pop-up experience will be available on Westerdam while the ship sails in Asia and on Noordam when sailing in Australia, as well as Grand Voyages and select Legendary Voyages.
New dishes comprise:
* Coconut Crusted Scallops: with honey lime dressing.
* Pork Bao Bun: with green onions, carrots, pickled cucumber, toasted sesame seeds and cilantro.
* Korean Beef Taco, Bulgogi (vegetarian on request): with kimchi mayo, Asian slaw, avocado and cilantro.
* Lumpiang Shanghai: with ground pork, egg roll wrap, sweet chili sauce and green papaya.
* Vegan Tom Kha Thai Coconut Soup: with kaffir lime, mushroom, bean sprouts and chili oil.
* Mongolian Lamb Chop: with baby bok choy, toasted sesame seeds and mirin plum sauce.
* Sweet Potato Cauliflower Massaman: with green beans, crispy onions, bean sprouts, basil and peanuts.

* Vegan Pineapple Coconut Tapioca: lemon grass foam and sesame tuile.
Tamarind is available for a $35 supplemental charge or as an included dining option with the ‘Have It All’ package.
Michael Stendebach, vice president of food, beverage and rooms division at Holland America Line, said: “The new Tamarind menu continues to celebrate the vibrant flavours of Asia with a fresh vision, while staying true to the restaurant’s roots. Tamarind is a popular restaurant, and we’re continuing to build upon the innovation that has defined this venue since the beginning. The new menu is nicely balanced, maintaining many guest favourites while introducing some exciting new dishes.”
The new partnership with Taittinger will see the brand’s Champagne featured on Holland America Line’s line’s sailaway parties*, which will include curated entertainment, music, food and beverages.
On embarkation day, guests can enjoy two exclusive cocktails featuring Taittinger: the ‘Bubbly Bon Voyage’, with notes of vanilla and passion fruit, and the ‘Cast Off’, featuring Flor de Caña rum, honey and lime juice. These cocktails are included in the Signature and Elite Beverage Packages or can be purchased individually. Additionally, guests can opt to buy Taittinger by the glass or bottle for an extra cost.
Co-branded Champagne carts will also be introduced in late summer 2025, so the cruise line can bring the celebration to guests around the ship.
Sailaway parties will feature a welcome toast and speech from the ship’s cruise director, accompanied by an exclusive soundtrack, ‘Home to Rotterdam’, as the ship leaves port. In addition, Holland America Line will integrate its Destination Dining concept into sailaway by featuring appetisers that reflect the region where the ship is sailing.
