Sustainable Fish Varieties Pass The Test At Battlesteads
In line with its unrivalled green credentials, Battlesteads pub, hotel and restaurant in Wark, near Hexham in Northumberland, has introduced hoki and hake fish varieties in place of haddock, cod and monkfish – and customers love them!!
All food ingredients used in the Battlesteads kitchen are either grown in the two acre gardens and two polytunnels on site or sourced from within a 25 mile radius of the hotel. Where there are questions over the sustainability of certain fish varieties, the team at the hotel have been experimenting to find suitable alternatives.
Owner and manager Richard Slade commented: “The problem with going down the sustainable route is it’s not always simple and, where a particular dish is very popular, it does take some experimental culinary skills to substitute popular varieties with unknown ones.
“We use hake for fish and chips and we’re experimenting with smoking hoki and hake instead of haddock for breakfasts and risottos.â€
The proof of the pudding – of the fish in this case – is always in the eating and customers have taken to the new fish varieties without any issues.
One of the latest dishes to appear on the menu is pan fried hake fillet wrapped in prosciutto, with wild garlic and hazelnut pesto, roasted heritage potatoes and greens from the garden and it’s going down a treat!
Regular customer and fish lover Catherine Robins commented: “I don’t like people messing with my food but, I must say, this is delicious.â€
