Whats Cooking at Marigot Bay…
From the finest gourmet cuisine in the French colonial-style The Boudreau restaurant to casual tropical tastes in the Hurricane Hole Bar, there’s something to suit every palate at Discovery at Marigot Bay.
In July 2007 Discovery appointed new Executive Chief Frederic Wagnon. Having spent 16 years in the Caribbean, Frederic has a passion for fresh local ingredients and brings a wealth of culinary experience to the resort having worked at Michelin starred restaurants and Jumby Bay, a Rosewood Resort. Frederic has introduced a new, tantalising menu at The Boudreau inspired by his regular trips to the market.
Guests can now sample yellow fin tuna with saffron cream, pan roasted parrot fish with an ‘escabeche’ of vegetables, pan roasted shark, lentil salad and egg plant caviar to name but a few dishes. The menu changes every two weeks and features the freshest organic produce grown right on the island.
Discovery at Marigot Bay is the first resort on the island to become a member of the prestigious luxury hospitality organisation, Leading Hotels of the World.
This month Discovery at Marigot Bay celebrated another milestone having been awarded the prestigious Blue Award from US-based Islands magazine in recognition of environmental achievements.
This award follows the launch of innovative ecological initiatives taken by the resort including the launch of the Caribbean’s first solar powered ferry, The Sunshine Express, which is used to ferry guests of the hotel across the bay to the numerous local bars and restaurants which dot the shoreline. Designed and built in Marigot Bay, the clean, quiet, energy-efficient ferry is the latest in a long list of environmentally friendly programmes adopted by the hotel.
Other enterprises include: natural spa treatments, beach regeneration, use of locally made paper, collection and recycling of used cooking oil and locally bought produce.
