The Mole tried to stay on a few days to give the Moet a caning, but sadly had to leave, with the event described as a continuous pour of fine Moet and Chandon and a decadent spread accompanied by the rousing tunes of the resident band, the convivial atmosphere spreads its infections cheer to all diners.

Back to Sunday, the Sunday Brunch was voted “Best Brunch in Singapore” by IS magazine and `Best Luxe Brunch’ by Singapore Women’s Weekly and the Moet is not the basic stuff but Moet and Chandon’s Grand Vintage 2000 and if you prefer a tinge of blush in your bubbly, you can go for the Brut Imperial, Rose.
The Sunday bar at Greenhouse also serves offers a selection of muddled cocktails such as Mojitos and flavoured Caipirinhas and Caipiroskas and if you happen to have a touch of hangover, apparently they make a mean a spicy Bloody Mary or vitamin-loaded Screwdriver.
The glass domed roof of Greenhouse is the vibrant dining hub of this classis Singapore hotel, with the Sunday buffet also featuring an extensive array of fresh seafood including poached live Boston lobsters, up to eight varieties of oysters shucked a la minute, mussels, clams and shrimp, as well as artfully sliced sashimi and freshly made sushi, freshly pan fried goose liver or made to order pasta cooked with a range of sauces and condiments, eggs benedict with smoked fish laced with Hollandaise sauce and oriental meats such as Peking duck, soy chicken and barbequed pork, all offered on carving boards alongside traditional roast rib of beef, lamb and sausages.
