Bali by the Sea pairs with Sterling Vineyards for special dinner
Mike Westerick, a winemaker from the distinguished vineyards of Sterling, is scheduled to make an appearance on Wednesday, March 12 at Bali by the Sea, the culinary landmark at the Hilton Hawaiian Village Beach Resort & Spa.
Westrick has created a solid reputation for creating world-class Bordeaux and Burgundy-style wines in his 15-year career. As winemaker for Sterling Vineyards, Westrick is applying his winemaking expertise and knowledge to create wines from some of the greatest vineyards in California, which are among some of the finest in the world.
The Sterling Vineyards’ Winemaker Dinner at Bali by the Sea on Wednesday, March 12 begins with opening remarks by Westrick at 6 p.m. in the Paradise Lounge, with dinner commencing at 6:30 p.m.
The five-course culinary journey begins with a Chef’s Surprise Amuse, and continues with Hawaiian ahi poke with Maui onions, avocado, ogo and spicy aioli. The dinner progresses with pan-seared foie gras truffle scented with caramelized Maui onions and bordelaise sauce. The entrée is a Colorado rack of lamb with Okinawa sweet potato, soy bean and vegetable ragout with natural lamb jus. Finally, the dessert is an irresistible chocolate lava flow with chocolate, fresh raspberry, almond dough with warm chocolate sauce. The dinner will be paired with five, 2 oz. pours of Sterling Vineyard wines for a special price of $85 per person (dinner and wine pairings included; tax and gratuity not included). Westrick will also be available throughout the evening to engage with diners about Sterling’s signature style.
Those who aren’t able to attend on March 12 for Westrick’s appearance can still get a taste of Bali’s five-course chef dinner paired with Sterling wines from March 4 through 31. The cost of the dinner alone is $70 per person, with the wine pairings for an additional $35. The prices are exclusive of tax and gratuity.
