Dolce Chantilly awarded first Michelin star
Dolce International’s Chantilly property was recently awarded a Michelin star. Le Carmontelle, Dolce Chantilly’s gourmet restaurant, has been recognized for its quality of produce, mastery of flavour and the “personality” of its cuisine.
Dolce Chantilly’s achievement has been further celebrated as it is also one of the first times that a conference resort destination has received a Michelin star, further underlining Dolce’s position as innovators in the meetings and events hospitality market.
“Michelin’s endorsement of Dolce Chantilly is the ultimate recognition of our chef Alain Montigny’s continuous achievement of gastronomic excellence. It testifies Dolce’s ongoing endeavor to raise standards in the meetings and events industry, as we pride ourselves in innovation and superior quality. We intend to continue leading the industry from the front†commented Philippe Attia, Senior Vice-President Operations Europe.
The Michelin accreditation, a testament to Dolce Chantilly’s 36-year old executive chef, Alain Montigny, follow accolades including nominations for “Meilleur Ouvrier de France 2004†(life-time achievement of craftsmanship) and Michelin’s “Espoirs 2006†(nomination for most promising chef). With remarkable dishes like the ‘Braised Tandoori Piglet’ or a ’Mille Feuilles with its frosted orange écume’, Alain seduces and surprises his guests with the sensitive and inventive cuisine.
