Lancaster Hotel Island Grill crowned sustainable champion
Lancaster London’s Island Grill has been awarded a top Three Star rating by the Sustainable Restaurant Association
Island Grill joins an elite set of five hotel restaurants in London to achieve this truly remarkable standard.
The restaurant was praised for its outstanding efforts to maintain sustainable and eco-friendly dining.
The SRA hailed Island Grill as an "excellent example of a Three Star Sustainability Champion" and highly commended its "sustainability initiatives and serious commitment to ethical practices".
Island Grill was awarded with perfect scores in Community Engagement, Responsible Marketing, and Waste Management and was especially applauded for its commitment to ‘Nose to Tail’ practices.
SRA praised the restaurant for no longer using fish that the Marine Stewardship Council has labelled "Fish to Avoid", while its choice of high welfare meat, and methods to conserve energy and reduce waste were considered "excellent practices". The use of Fairtrade and local products, as well as the offer of beers and cider from UK breweries, were held in high regard.
In particular, the ten beehives on the second-floor roof of the Lancaster London, which provide honey for the restaurant, are seen to demonstrate the hotel’s utmost commitment to sustainability. The practice of in-house smoking of salmon is another testament to the restaurant’s sustainable outlook.
The work that Island Grill undertakes with local schools, as well as local and national charities, was deemed admirable. Also within its own premises, Island Grill’s attitude towards its staff was especially noted, with the SRA commenting that "areas for improvement were hard to find". Free healthy meals, plus the range of training opportunities provided to staff were described as "excellent".
Mark Linehan, Managing Director the SRA, said: "This is a fantastic achievement and a real testament to all the work that has gone into sustainability at the restaurant and the hotel."
Eibhear Coyle, Executive Chef Director of Catering at the Lancaster London, added: "It is a huge honour to receive this prestigious award. We have worked hard to achieve this goal and our next aim is to work towards a sustainability rating for the banqueting operations in the hotel."
Lancaster London currently holds the titles of AA Eco Hotel of the Year 2012, and The Considerate Hotel of the Year 2012, as well as a Gold Star in the Green Tourism for Business Scheme 2012.
