What’s hot in hotel kitchens these days?
Restaurant pampering is becoming as important as spas, says Bob Zappatelli, corporate director of food and beverage for Benchmark Hospitality International.
“A variety of food choices and highly personalized service are becoming a treat after a long day in meetings,” he said.
Other trends noted by Mr Bappatelli, whose company operates international resorts and hotels:
• The Atkins Diet is turning out to be a fad.
• European cuisine, which encourages a leaner diet, is catching on in the US.
• Refreshment breaks are moving in the direction of convenience stores with guests looking for quick “pick up and carry out” choices.
• Cooking gatherings and culinary team building are becoming popular choices, with more meeting-goers seeking “cooking together” opportunities.
