Community involvement
Glad to read the above comments and would like to add my voice to involvement of community in sustainable tourism.
Working in the past for a hotel chain and leading the “sustainability” program the major concern was the economic impact this would have on the business.
I have on the other hand just completed an assessment of the Menjangan Resort in north west Bali a small accommodation venue and was delighted to see that they are truly focused on conservation and use the local people involving them in community consultation, project management and building of the resort. They also have on there list of activities an evening where you can partake of the traditional cuisine and much more.

It would therefore appear to me from my travels and working with both large and small hotels/resorts that smaller accommodation places, in varied global locations, often a little of the beaten track, are the ones that are embracing local community not just in hiring them but in the conservation effort for true sustainability.
