Marco swaps Hell for swell

Hell’s Kitchen head chef Marco Pierre White is preparing to switch to the more serene atmosphere of P&O Cruises’ new ship Ventura.

Among the nine restaurants on board the vessel, to be launched next April, will be his fine dining venue The White Room, which will serve classic Italian cuisine.

Ventura will also be home to the first floating Frankie’s Bar & Grill, Pierre White’s restaurant in partnership with champion jockey Frankie Dettori.

He has finalised menus for The White Room, with dishes to include veloute of pea with pancetta, fillet of turbot with citrus fruits, olive oil, coriander and baby fennel, and hot raspberry souffle.

Pierre White said: “After being in Hell’s Kitchen, I am looking forward to the heavenly surroundings on board Ventura.

“The menus I have created for the White Room have been put together using simple authentic ingredients to produce colourful, light dishes where the flavours speak for themselves.”
